Vegan Chocolate Chip Cookies

I made this recipe for a friend of mine who just recently went vegan, and I had a lot of fun doing it! This cookie had a buttery type flavor that would go perfectly with a big glass of Almond milk.
Hope you enjoy them as much as we did!


1 1/2 cups of Sugar in the raw (or 1 cup of white sugar and 1/2 cup of brown sugar)
3/4 to 1 cups of coconut oil melted
2 Tablespoons of flaxseed meal
6 Tablespoons of Water
1 teaspoons of pure vanilla
2 cups of white flour
1 teaspoon of sea salt
1 teaspoon of baking soda
2 cups of Enjoy Life chocolate chips (or any Vegan chocolate)

Preheat the oven to 350
In a large bowl add sugar and coconut oil, if you are using raw sugar, let it soften in the oil for about 10-15 mins. In a different small bowl, mix flaxseed meal and water, this also needs time to sit, about 10 mins. Add flax mixture and vanilla to the sugar mixture, and mix until fully combined. Add flour, salt, baking soda; mix till combined. Finally add the chocolate chips. Use a Tablespoon to drop cookie dough on an un-greased cookie sheet and bake for about 15 minutes.

*Note: the chocolate chips may slip around due to the coconut oil,  just try and mix them to get an even distribution.
